Fatigue Fighting Breakfast


Today has been a good day, for various reasons. I'm proud to report that I was able to drink an entire cup of coffee without goobering down the front of my blouse. This is a rare and wonderful thing. All cups are dribble cups, for me.

Secondly, I began the day with my favorite breakfast. I have found that beginning my day with a meal that contains protein and complex carbohydrates seems to give my energy levels a steady source of power throughout the day.

We first encountered this breakfast goodie at a rustic northern Wisconsin resort. They called it a "Popeye".  The original Popeye was a slice of white bread thickly slathered with butter and a cookie cutter hole punched in the middle. It was tossed on the grill and an egg placed in the hole. Once browned on one side, it was flipped over to finish cooking. Presto! Eggs and toast in one pan.

I made a few changes to make the Popeye my favorite breakfast. Spelt whole grain bread replaced the white, and I substitute low fat spread for the butter. This version of a Popeye washed down with one - just one - cup of coffee is a satisfying go get 'em start of the day.
